Ingredients: 1/4 cup whole-grain mustard, 1/4 cup Dijon mustard, 1/8 cup white vinegar, 1/4 cup apple juice, unsweetened, 1 tbsp. olive oil, 1/4 tsp. coarse ground black pepper, 5 lbs. chicken pieces, with bones-in, 1 med. red onion, 1 med. yellow onion
Mix together mustard, vinegar, juice, oil and pepper in a mixing bowl, whisking to combine. Peel and chop onions into 1/2-inch wedges. Place chicken, onions and marinade in a large resealable bag. Seal tightly and shake gently to cover chicken. Place bag in refrigerator and chill from 3-8 hours. When ready to grill, remove chicken from marinade, but leave the onions in the bag. Place chicken on a medium-low grill and cook, covered, 30-40 minutes, or until cooked through, turning occasionally. When chicken has about 20 minutes left to cook, remove onions from the marinade. Discard marinade. Place onions on grill, and cook along with the chicken, turning occasionally. Remove from heat and serve.
