In this video we will learn how to make jalapeño orange mustard chicken breasts.This is an amazing chicken dish which carries beautiful flavors of jalapeno pepper and rich color of orange marmalade. It can be served hot with mashed potato or pasta as a side dish.
2 chicken breast
salt to taste
pepper to taste
1/2 tablespoon minced jalapeno pepper
1/2 tablespoon minced onion
1 teaspoon Dijon mustard
1/2 tablespoon orange marmalade
1/2 cup white wine
1 tablespoon butter
1 tablespoon olive oil
1 cup chicken stalk
1 fresh lime (squeeze to extract juice, discard seeds)
Season the chicken breast with some salt, pepper and keep aside. Start by heating olive oil and butter in a pan and place chicken breasts upside down. Flip sides once cooked and allow the other side to cook for a while. This should take roughly abut 5 minutes on each side. Transfer the chicken to a bowl and on high flame add minced jalapeno, pepper, onions and keep stirring for about a minute. To this add white wine and cook for about 2 minutes or until the alcohol evaporates. Add chicken stalk and allow it to reduce to half, this should take about 3 minutes. Another layering to this sauce needs to done by adding mustard and orange marmalade. Stir all the ingredients well and add lime juice. Towards the end add butter and cooked chicken breasts. Complete the cooking by covering the pan with aluminium foil and place it in the microwave at 350 F for about 10-15 minutes. Serve hot.
