To make this, all you need is a cup of cooked chicken, diced celery, seedless green grapes, lemon juice, salt, black pepper, curry powder, mayonnaise, or salad dressing. You simply toss the entire ingredients together, chill it in the fridge and it is ready for serving.

Ingredients: 1/4 tsp. salt, 1/2 tsp. coarse ground black pepper, 2 tsp. curry powder, 6 tbsp. mayonnaise or salad dressing

Preparation Instructions: In a mixing bowl, combine all ingredients, tossing lightly.  Chill before serving.

There are many ways to serve chicken salad. You can serve it on a bed of crisp lettuce or mix it with freshly cooked macaroni or pasta. You can also use it as a sandwich filling and enjoy it as a flavorful snack. Curried chicken salad can also be used as a filling for pita bread or crepes and can be mixed with boiled and cubed potatoes to make chicken and potato salad. If you have leftover roast chicken or grilled chicken, take them off the bone and dice them into cubes or shred them to pieces to make this recipe.
