To make this simple and flavorful healthy dinner recipe all you need are a few ingredients including chicken, fresh corn off the cob, green peppers, onions, fresh cream, water, and seasoning to taste. You can also spice this up with chili powder if you want a hot and creamy soup to satisfy your cravings.
Before making this recipe, prepare all the ingredients first so that they can all be added to the saucepan together. The chicken should be washed and pat dry and then cut into halves. You can slice them into bigger or smaller pieces depending on your preference. The corn should be shucked and the kernels be taken off the cob. After removing the husk but leaving the stem on, remove the silky hairs by rubbing the ear of the corn gently or using a dry towel to get the sticky silks off. Hold the stem and place the corn on a bowl so that the surface of the bowl supports the other end of the cob. Slice through the corn to remove the kernels, careful not to slice into the cob itself or you’ll get woody and tough chips on the soup.
Ingredients: 500 gms chickens, cut in halves, 5 ears corn, off the cob, 3 medium green peppers, seeded, chopped, 4 onions, peeled, chopped, 100 ml fresh cream, 3 cups water, seasonings to taste
In a saucepan add all the ingredients except the cream and allow it to boil. Simmer it and then cover. This should take about 30-35 minutes to cook. Add the whipped cream to this and let it boil for another 3-4 minutes. Serve hot.
Wash the green peppers and pat them dry then slice in half and take out the core and the seeds and wash by running it through cold water to remove any remaining seeds. Chop the peppers julienne-style or dice them into small squares. Once the ingredients have been prepared you can now make the soup according to the recipe instructions.
