Fresh shrimps are marinated in a mixture of fresh lime zest fresh lime juice, jalapeno, garlic, low-sodium soy sauce, olive oil, chili powder, cayenne pepper, dried cilantro, and honey, and then grilled till pink and succulent. For the best tasting healthy dinner dish, use the freshest shrimps you can find caught on the same day it is sold, bought and prepared. At most, it should be cooked within the next 24 hours it has been cooked. Frozen and thawed shrimps have diminished flavor and are not ideal for grilling. If fresh shrimps are not available in your area, however, use frozen shrimps that is carefully packed and sealed. If frozen and stored right, the shrimp can retain its quality for weeks. When buying fresh shrimp, buy only those that smell of fresh water. Avoid anything that smells of ammonia or has a strong chemical scent. Also avoid shrimps with pink meat and those that have black spots or rings.
Ingredients: 1 tsp. freshly grated lime zest, 1 tsp. fresh lime juice, 1 jalapeno, minced, 1 clove garlic, minced, 2 tbsp. low-sodium soy sauce, 3 tbsp. olive oil, 1 tsp. chili powder, 1/4 tsp. cayenne pepper, 2 tsp. dried cilantro, 1 tbsp. honey, 1 1/2 lb. medium shrimp, peeled and deveined, Bamboo skewers
In a bowl, mix together all the ingredients except the shrimp. Stir well to combine. Place shrimp into a large, resealable bag. Add lime marinade. Seal bag. Rub the shrimp, through the bag, for marinade to penetrate into the shrimp. Chill shrimp for 20 minutes, no longer, to marinade, turning once after 10 minutes. Remove shrimp from bag and place on a plate. Skewer shrimp, about 5-6 per skewer. Place shrimp on preheated grill. Cook until opaque, about 2 minutes on each side. Serve.
Shrimps cook very quickly and to retain their succulence and flavor, they should be cooked fast on high heat. Overcooking shrimps will make them dry and tough and cause them to lose their sweet flavor. Cook the shrimps just until they turn pink and opaque. To grill the shrimps, you need bamboo skewers. Make sure there is ample space in between the shrimps for them to cook evenly on all sides. The shrimps should be marinated no more than twenty minutes. Wash, peel, devein and pat the shrimps dry before marinating them. Pull off the head and the legs and peel off the outer shell and remove the black string at the back of the shrimp. You can choose to leave the tail on for presentation.
