Ingredients: 1 ¼ lb. potatoes, peeled and cubed, 2 tablespoons butter, ¼ cup grated Cheddar cheese, 4 slices ham, chopped, ½ cup all-purpose flour, Spray oil, Salt, Freshly ground pepper
Fill a saucepan with salted water and bring to a boil. Add the potatoes and cook until tender, about 10 to 15 minutes. Drain. Mash, mixing in the butter and cheese until melted. Add the ham and flour, stirring well. Season with salt and pepper. Shape this “dough” into 8 discs about ½ in. thick. Spray a skillet with oil and cook the potato pancakes for about 4 to 5 minutes on each side, or until golden. Drain on paper towels before serving.
